A Look Back: Celebrating 125 Years of Cake with Wesson

This year marks 125 years since Wesson was first introduced to American kitchens. In the time since, Wesson is proud to have become a kitchen staple and a go-to for generations with a trusted heritage for quality, purity, and versatility. Today we remain committed to delivering an oil that is the pure foundation for every meal – especially cakes!

The world looked very different in 1899 when David Wesson developed an innovative process to produce vegetable oil and formed the Wesson Oil Company. Yet, the tradition of sharing a love for family and friends through food connects past to present.  At Wesson, our belief that the best memories are made around the dinner table remains a central pillar of our brand. This guiding principle inspires us to share our love for food that brings people together.

We embrace our love for food through sharing recipes. The Wesson kitchen has crafted some truly delicious dishes over the decades and for Wesson’s 125th birthday we have decided to focus on the classic celebratory dish: Cake.

One of our most popular recipes is the Wesson Lovelight Cake, a chiffon layer cake that was first introduced in the 1955 Wesson cookbook, Quicker Ways to Better Eating. The Lovelight cake was an immediate hit because of its light and airy texture, courtesy of Wesson oil, and simple ingredients –it’s a layered cake with just two eggs!

Fans of the Lovelight Cake also praised how effortless this luxurious-looking cake is. While cake batter made with butter or shortening required extensive mixing, the Lovelight Cake only needed 2 minutes of mixing to achieve a light and delicate texture. This meant that it was a time and energy saver, especially before electric stand mixers were invented.

The Lovelight was also loved for its customizability. Aside from the classic Chiffon Yellow Layer Cake, Wesson fans could enjoy the Lovelight as a chocolate, spiced, peanut butter, banana, and orange cake, or even as Lovelight cupcakes!

In the years following, the Lovelight cake became a staple in American kitchens and alongside Florence Henderson’s Wessonality, is a defining chapter in the story of Wesson. This year, the Wesson kitchen has recreated this classic cake, with two new and exciting flavors for a modern audience.

The first is a Peanut Butter Banoffee Lovelight Cake: a fluffy banana cake drizzled in peanut butter caramel with the crunch of peanuts and sweet banana chips. This cake – a nod to the classic Peanut Butter Lovelight Cake – is a guaranteed party-pleaser and a great dessert to make with your kids this baking season.

The second is a Blackberry Lavender Lovelight Cake: a medley of fruity flavors and floral notes that makes this cake truly exquisite.  We love to elevate any dinner party with this elegant yet decadent dessert.
